EMS is the way to go. I got a bike frame back to the US for about 7000 yen. It took about a week so the shipping time is not bad either. -

Best place I found is Paddle Club on Nango Dori in Atsubetsu. There are several people there that speak English. Another god Spot ICI sport Both stores have people that actually ski working there as opposed to Xeibo where they seem to be just salespeople. -
Akiba has several Doner stands.

If you have a U.S. Garmin there is some third party topo maps available for Japan. Cant remember the name right off but there was some info over on the avi section of the section of the forums.

Post offices will have an ATM that take foreign credit cards. The machines are in English so you wont have any problems. -
