Tubby Beaver 209 Posted April 9, 2014 Share Posted April 9, 2014 today I went down to one of my favourite ramen places, ZERO in Tanuki Koji-1, it has good soup but the real reason for going is the aburi-yaki char-shu miso ramen......they give you a huge slice of pork belly which has been seared over the BBQ just before it being placed in your bowl. the BBQ caramelises the fat and makes it ooze this, to die for greasy-BBQ'd meat umami flavour into your soup......mmmmmm!!
