merryJim 1
I used to really like ramen. This last weekend though I was showed ramen being made at a local place by a friend and was seriously put off. What looked like old bones, fish parts and other gruesomes. I think I'd even prefer sausages now!
indosnm 0
Gotta make the broth with something! Helps not to look.
kintaro 0
I don't really like the ramens with a "fish parts" base but I have no problems with the pork bones. There are a plethora of ramen variations. I must say Tokyo, especially Setagaya, has lots of good places. But Sapporo might be the best of all (Sendai is completely lame). A simple nori shoyu with plenty of pepper is my fav. brit-gob 9
A good negimiso is my current fave. I will pass on knowing how they make the soup!
flipside 0
Soup stock is the secret flavour behind a lot of delicacies. Maybe you shouldn't look in the kitchen. You can't beat a good tonkotsu-ramen. My two cents.
indosnm 0
Nagoya has made me a Miso ramen man though due to the high fat/oil content I very rarely touch the stuff any more.
farquah 0
Awsome Ramenya san in Chiba where the broth is made with the pork fat and dripping!! Heart attack in a bowel but absolutely delicious and a great hangover cure, ask Ngarutoa/Maori Boy!!!!
KlingKlang 1
Reminds me of something someone brought as an omiyage once, I think it was called port scratchings - basically just crunchy pork fat!
zapcity 0
Pork scratchings. Boss. I used to love them. Must why one of the reasons I used to be 15kg heavier than I am now.
joshnii 2
I like it generally but a few times when you see the pools of oil forming on the top of it all - yuck.
happyhappy 0
Do they really put crushed chicken bones in it? Actually I'm not sure if I want to know...

You're eating it too slow if it's cooling down. You've got to get the Japanese technique down and slurp it down faster. I don't think they crush the bones, just boil them for a day or two. And I think it's pork, haven't tried chicken ramen, sounds like a Thai dish.
rach 1
It all sounds a bit gruesome to me. Like happy2, not sure I want to know.
BagOfCrisps 24
I had some ramen last night actually for tea/dinner/evening meal. It was alright, but what I had in Japan was better.
