Lard is more healthy because: 1) it doesn't break down into carcinogenic compounds as readily as vegetalbe-based oils, and will withstand a higher frying temperature, yielding a more crispy product. 2) lard has a lower viscosity at operating temperature, so more of it will drain off the food: Vegetable oil tends to cling to the food or soak in.
