I think you'll find the most developed resorts like Niseko and Hakuba (Echoland) to be the most fun. Those are the only 2 resorts I've spent NY's at and they're both great! Niseko has the fire skiing which is (silly) but fun drunk. There are tons of bars up there too. Hakuba has good bars and some dance clubs as well so good times for sure.
