I did Hokkaido trips around 12- 15 Dec for a few years and found it pretty stressful - seriously having to think about cancelling 3 days out because the webcams show golf courses and losing the deposit or hanging in and chancing a last minute fall. There is a good chance of having some coverage but it will be pretty thin (for Niseko's standard) and it is likely that there will only be some courses that will be closed and much of the off-piste will be too rough to ride. Even in a good year 8th Dec is probably a bit early for off trail riding without damaging your gear. Kiroro is famous for getting early snow - think about that as an alternative.
