Nothing special but after prep....saute all the filler veggies and spices. Cut up the habs , add them in and boil them up in a mixture of water and fish sauce extract. The real Thai stuff is better than the Japanese. I also did three "cooks" of milder jalapenos... Once everything is nice and soft put it in a blender and add rice vinegar (lots of it) and hit it all hard with the mixer. Sorry , forgot to take any finished shots but ...That's it.....bloody best hot sauce you'll ever have. Spoon it onto anything.
