I'm doing all of the legwork, or fingerwork, via booking.com/agoda/trip advisor. Seems you've had more luck than me. Last hotel I checked was something called Appi Grand and it was booked solid.

There is contact information (e-mail, phone) on that page, so you can contact them directly and inquire. I seriously doubt they are booked solid -- probably just not set to accept online bookings that far ahead.

I have used Korean Air a few times.
They were ok. Not amazing. Not terrible. Pretty normal I'd say.
They have great food.

I had always somewhat lazily thought of Yuzawa as an onsen town with skiing, though now that I think about it, perhaps it is more of a ski town with onsens?
