Just come back from a fantastic week up in Hokkaido and specifically Niseko. It was my first time there and wondered if the snow could really live up to the reputation. It did. We got such consistent and quality snow, it almost felt not possible! Truly excellent and better than anywhere else I have experienced in Japan.
I have nothing against foreigners, I am one myself, but Niseko is no totally overwhelmed with international guests that it almost doesn't feel like Japan any more. Which is a shame but that's what comes with the snow and popularity.
So if you want the snow, it's hard to beat. If you want to have a bit of a more Japanese experience, perhaps elsewhere is better suited.
No specific date.

Things I didn't like:
I'm a foreigner, but there's more of us than Japanese in Niseko. It doesn't feel like Japan.
