You can go to website www.shinshu.online.co.jp (japanese version) for accommodation details. I have stay at the grand hote there. service is good but expensive about yen 12000-18000/night/person. The most deluxe Ryokan Sakaya(www.ryokan-sakaya.co.jp) is about yen 18000-22000/night/person. there are also many small and economical ryokan and inn which you can contact above website's link to make book or fax directly to the ryokan to make reservation.
